History of Toulouse in a few lines:
Origins and Antiquity:
Founded by Celtic tribes (the Volcas Tectosages), Toulouse (Tolosa) was an important Roman settlement in the province of Gallia Narbonensis.
Middle Ages:
Visigothic Capital and Powerful County: After the fall of Rome, it briefly became the capital of the Visigothic Kingdom in the 5th century. Later, it consolidated its position as the seat of the County of Toulouse, one of the most powerful and culturally vibrant feudal entities in southern France (Occitania). It was a vital center of Catharism, which led to the devastating Albigensian Crusade.
15th to 19th centuries:
Trade, University, and the Industrial Revolution: Integrated into the Kingdom of France, the city prospered thanks to the trade in woad (isatide), a highly valued blue dye. The University of Toulouse, founded in 1229, became an intellectual pillar. During the Industrial Revolution, its focus shifted to industry and the development of key infrastructure such as the Canal du Midi.
20th Century and Present Day:
At the beginning of the 20th century, Toulouse transformed itself into the center of the French aeronautical and aerospace industry, a legacy that began with pioneers like Pierre-Georges Latécoère. Today, it is a major European technology and education center, known as "La Ville Rose" (The Pink City) for the color of its terracotta buildings. Its economy combines aeronautical innovation (home to Airbus) with a rich cultural and academic life.
If you're looking for a cheap city (flight + accommodation), this is one of them; it's always very affordable. It's supposed to be a lively university town, although there wasn't much to see and we didn't see that many students, but it's not bad for a short break. We actually brought our roller skates to explore the city (in case any skaters might be interested) since it's very flat.
We didn't put too much thought into what to eat, but the typical cups of assorted Chinese food tasted heavenly.

Toulouse goes very well with Montpellier, especially if you're looking for a route through vibrant cities in the south of France with good food and local atmosphere.

Hotel: €127 for 2 (3 nights) but we finally found it cheaper (€108) at Hotels.com y Booking He matched our price. Résidence de Brienne – Séjours et Affaires Booked through Booking. It had a kitchenette, it wasn't far but it wasn't a great place, just adequate for what we needed it for.
